LUMPIANG SHANGHAI RECIPE

INGREDIENTS

  • 1/2 tsp ground black pepper
  • 1 tsp sugar
  • 1/4 tsp sesame oil (optional)
  • 1/4 cup water (for moisture)
  • For the spring rolls:

  • 1 pack of lumpia wrappers (25-30 pieces)
  • 1 egg (for sealing the rolls)
  • Cooking oil (for frying)
  • INSTRUCTIONS

      Prepare the filling:

    • In a large mixing bowl, combine the ground pork, grated carrots, chopped onion, minced garlic, and chopped green onions. If using shrimp, add that as well. Add the egg, soy sauce, salt, pepper, sugar, and sesame oil. Mix thoroughly until combined. Add water if the mixture seems dry, but ensure it holds together.
    • Prepare the lumpia wrappers:

    • Lay one lumpia wrapper flat with one corner facing you (diamond shape). Place 1-2 tbsp of the filling in the center. Fold the bottom corner over the filling, then roll it tightly. Fold the sides inwards like an envelope and continue rolling towards the top corner. Brush the top edge with beaten egg to seal the roll.
    • Fry the lumpia:

    • Heat enough oil in a deep frying pan over medium-high heat. Once the oil is hot (around 350°F), carefully add the lumpia in batches. Fry for 3-5 minutes or until golden brown, turning occasionally to ensure even cooking. Once done, remove the lumpia from the oil and place them on paper towels to drain excess oil.
    • Serve:

    • Serve the Lumpiang Shanghai hot with a dipping sauce such as sweet and sour sauce or a vinegar-soy dipping sauce. Enjoy your crispy spring rolls!

    TIPS

    • To make the lumpia extra crispy, make sure the oil is hot enough before frying. You can test this by dropping a small piece of the wrapper in the oil, it should sizzle immediately.
